Umphoqoko/Uphuthu (Umvubo)

Umphoqoko or Uphuthu in IsiZulu is a quick dish that takes less than 20 minutes to cook, the trick in getting umphokoqo right is to have less water and more Maize meal.

This meal reminds me of sunny days at home where we would mix milk with full cream amasi and just pour over at Umphoqoko and maybe throw in a piece of chicken in the microwave just to wash it down.
